for action shots in the woods when it's gray out, what settings do you go to for a 'default' and what mode are you running in? Full manual, Aperture priority???? I'd love to know what your go-to setting is.

99% of your shots should be in manual mode (ISO, speed, aperture). This gives you a more consistent shot. Wide open has it's advantages and disadvantages. Everything is a give and take in photography.
