I got this older bro' who in the early '70's sailed a small boat from Japan, through the Philippine and Indonesian archipelagos, east Africa etc. who told me whenever he stopped in port he looked for Chinese restaurants 'cause of their cleanliness he felt he could safely eat there w/o getting sick.

Fast foreword a dozen years I'm renting a room at 14th and Dunbar from a Chinese lady whose elderly father was a missionary in China, buncha' Chinese UBC students living there one day young Chinese girl (she's related to landlady) comes to visit w/some white dude w/a doctorate (whoa!) who turns out to have lived in China for a few years teaching.
So I asked him what the deal was with the grunge and centimeters thick grease build-up on the landladies stove upstairs, was it because of the coke-bottle lenses on her glasses, was she simply blind 'cause it was definitely a fire hazard.
And he's like, "the Chinese are pigs!"
So I relate about the bro', the boat, Chinese restaurants, the hygiene, etc, and he's still like, "the Chinese are pigs, ok, they're just pigs!"
I dunno;, maybe he had a hard-on for Chinese culture 'cause he and the Chinese girl he came over with had to keep the fact that he was boning her all hush hush or her relatives would get all agro on her or something..........
That's all I know about Chinese food. That and MSG.

When I lived in taiwan i was a little blown away by the following (foods):

deep fried chicken anus
snake hearts (or was it the bile duct?!?)
monkey brains

... all readily available although the chimp brains were most likely out of my budget at the time... still makes me sad thinking about the chimp

I love the chicken feet. They have some super spicy pickled feet that go great with beer.

I haven't tried the urine eggs but I have tried an egg where they let the chick half develop then bury it in the ground for a month or so until it ferments. Those put hair on your chest.

other things I've tried: dog innards, bbq'd scorpions, donkey penis and testes, fermented tofu...

Usually countries that have experienced mass famine at some point learn to enjoy eating some pretty strange stuff.
