I could get the following sets of disc brakes:

Shimano Deore 535 (lever/caliper/hose) without rotors: 150 CAD (I have adapters and Hayes 203 mm discs already)

Shimano Saint (lever/caliper/hose/adapter) without rotors: 300 CAD (again, I would run Hayes rotors)

Avid Juicy 5 with 203mm rotors (full set): 300 CAD

300 is pretty much my budget and bear in mind these are prices over here, just converted to CAD. Out of these three, what should I choose?

I would go Juicy 5's, but it might just be becuase I like the word Juicy.

SAINT ! I run saint on mine right now, and there nuts. Havent had any problems, they dont fade, and they are truley single finger brakes if you want them to. You can stoppy for miles as well. THey modulate amazingly. If you want more testimony check out MTBR best of, and saint brakes are in there. THey get a higher rating then almost any brake, highly reccommended, and better than the juicy 5's or deores ANY DAY :D
