Ontario riding

I'm visiting family here in ON up in Barrie - where are some decent places to ride (more technical the better). I already know about Hardwood, Buckwallow, Blue Mountain, and now I'm hoping to check out "Santas village" (which is suppose to be the closest thing to NS they have here)

So all you ON people who read this site: where do you go (other than Quebec and the states)?
