I don't think you can really.
Everytime I wash mine. The stink comes back in a ride or so.
I think the only way to really get rid of it is to hose it down after every ride so that the bacteria don't have a chance to get 'busy'.

I've had my Mad Max for 2 years or so, and it still smells relatively new...and I sweat like a mofo when I ride.
When I had my Bell, it smelled as though I stored decaying meatloaf in it.
I think it has something to do with the materials in the liner.
Take it to Stinky's at 8 Rinks in Burnaby. They have some process that will get the smell out and make it like new again. Lots of guys do it with hockey gear each season.

Take the pads out. put them in the washer with a couple drops of tea tree oil. wash. Let dry in the sun if possible. Works well for gloves and pads, too.
You can get tea tree oil from any health store, it is great for cuts as well. It's the most powerful antiseptic in the world.
The UV rays from the sun also kill bacteria.

If your helmet doesn't have removable pads, just get a light weight brush that fits inside, soak the whole thing in water, add laundry soap, just a bit, scrub away, and rinse the heck out of it.
Or crash replace it. :)
The hockey gear option works amazingly well, btw. Doesn't cost very much either, and you can get all your armour done at the same time.
