On that note, anyone had any success w/ those tubeless conversion kits for non-tubeless rims?

Stans IS the conversion kit. I run Mavic 321s with Stans kit in them and Michelin rubber, it works amazing. Less weight, rolls faster, you can run less pressure for better grip, it NEVER flats, and of course you get the puncture resistance as well. It doesn't lose air, either, like a lot of people seem to say about tubeless.

Disadvantages... Getting the tire on and sealed initially is a pain in the rump. Therefore, maintenance tasks such as replacing broken spokes or mangled nipples that require you to break the bead and pull the tire off are also a pain.

I noticed that my Michelins sit flatter across the crown, effectively making them a little bit wider and flatter, when you run without a tube. The difference isn't much, but it was just enough for me to notice it when tryinf to squeeze my front wheel into my bike rack.
